Depending on the county you are in you may want to see if there is a local license required for paver installation. If not, then you are fine to install brick pavers without a license.
In terms of other work, you can do anything for which a license is not required. So no electrical, no plumbing, no HVAC, no specialty contracting work, nothing structural, and no building of most kinds. You are very limited in what you can do without a license, so it may be helpful to describe what types of work you want to do, then we can see if a license is required for that.
