I do specialty fabrication off site before delivering to the job site, when should my start day be?

That will sometimes depend upon what the written contract says. For mechanic's lien purposes, the start date is when labor or materials are first delivered to the jobsite. But look at your written contract because that will set the terms, if there are any.
