What qualifies a construction job in Louisiana for the need to be stamped(approved) by a PE or Architect ?

I am a Mechanical Engineer I graduated from La Tech university with a bachelor's in science. I recently started my own business and I have been getting a lot of buzz about construction drawings and architectural packages. I don't want to claim I can do something and it illegal.

Assuming that you have all your PE requirements satisfied, including your apprenticeship, you should be able to stamp construction documents assuming you feel comfortable with the drawings themselves. The best resource to determine what precisely requires an engineer will be a combination of state and local guidelines.
