What kind of documentation is required to file a claim against a bond? Receipts?

You need to file a lawsuit in Superior Court naming the contractor, and bonding company and bond number. After the lawsuit is filed, it needs to be delivered to Labor & Industries for service on the contractor and bonding company. After that the suit is treated the same as any other lawsuit.
