We are a subconctractor - we filed a mechanics lien - now we are filing an Mechanic's Lien Extension - does the general contractor have to sign the extension or just the owner and us?

Just the lien claimant and the owner. Check out Section 8460 of the Civil Code. Don't let lien expire before you get the extension recorded. Good luck.
