Hello, I have a customer who wants me to sign an Unconditional Release with a date of November 30, 2019 even though we did not receive their payment until December 5, 2019. She's telling me the dates don't matter as long as we got paid -- but that makes no sense to me. She has her own form, which is fine in Washington State -- I just don't want to sign something (and get it notarized which she requires) if it's not true.

The release date can be different than the date of payment or date the release is signed. You should only agree to a release date that is consistent with your invoices, the owner's payment, and with a reservation for any outstanding change orders, retainage, claims, etc. If the payment is for work through November 30 and you have no reserved items, I see no problem with the release using that date.
