We have completed a project and are waiting for retainage payment, however, the owner has fired the old GC and brought in a new one. What do we need to do in order to make sure we get our last payment?

This seems a little too complicated to provide a simple answer without knowing more details. Assuming that the owner is still holding all of the retainage, you should be able to bill the new GC. However, I believe it makes sense to carefully analyze this situation, and, if possible, protect yourself by filing a lien or bond claim if necessary.
