If my contractor has been paid in full prior to getting a lien release. Should the release I ultimately receive total 0

The job was done satisfactorily five months ago. I paid my builder $125,000.00 for the work he performed and he accepts the amount as paid in full. I later asked him for a lien release, should it reflect the amount paid and accepted or should the amount on the lien release be zero?

The important part of your lien release should be the statement that it is a FULL release of all claims to liens on the property.  The amount actually listed in the lien itself (if any) is not relevant here, where he's been paid, accepts he's been paid, and it is not a conditional lien waiver.  I'd use the Zero dollar just to keep it simple if you must put in an amount (and there is no requirement that you must).
