I am a customer/ property owner. Can I stop a job and refuse payment because the work has not been done professionally?

Hi there, I'd love help on a construction matter - happy to engage a lawyer and would like help asap on this. Can I stop a job and refuse to pay if the work has not been performed to professional standards? I own a home and contracted with Interlock roofing to remove existing roof and replace with a metal roof. We've paid a $25k deposit - and I want to stop the job and get that deposit back, and move on to another team. The on-site team has worked without safety gear (fall protection), have damaged our property and neighbor's property, and is not providing photos of the work to verify the work meets their professional standards. I have no confidence that this job is getting done to professional standards, and it feels like a big risk to allow them to keep going.
