Can I just use an invoice or is demand letter required?

TexasMechanics LienPayment Disputes

I am needing to know what kind of form to submit to a client to recover an unpaid labor and service cost for a completed roof replacement. The client has stated he will agree to pay the amount due however he wants something in writing that the amount is paid and will not get a lien on his property.

The formal form is set out in Section 53.284 of the Texas Property Code. You can review Chapter 53 (and find Section 53.284 near the end) at the following link:

https://statutes.capitol.texas.gov/Docs/PR/htm/PR.53.htm

Or you can write on your invoice upon receipt of payment: "Payment received in full. Contractor waives and releases all mechanic's liens and claims."

Good luck.
