We had our attorney send a letter of collection. Thus resulting in attorney's fees. Can we add these fees and late fees to a Stop Notice?

That's a good question for your attorney to answer. If the Stop Payment Notice was bonded, then the prevailing party may be entitled to Reasonable Attorney's fees and costs. Look at California Civil Code Section 8558.
