If I own property and hire a builder to construct a single-family residence, how much money do I need to hold back from the builder to make sure that at the end of the construction there are no mechanic liens on the property?

Generally there's no set percent. Usually the owner owns a substantial amount at the end and you just hand it over at the completion of the punch list.
