Adverse contractor judgement

Hello, we hired a contractor to do some work, he gave us a quote for services, once the job began, he realized that he didnt need to use certain materials. However when the job was complete, he didnt want to reduce the entire cost of materials/labor that weren't used for the job. He submitted the invoice for payment and we disputed it and asked him to sit down with us to go over the work order and worked performed to make an adjustment. He has refused to do so. We paid him what we felt was fair and insisted to sit down with him. He refused and now has tacted on late fees and has threatened to bring a judgment against us in 30 days if we don't pay. We don't mind paying,but not over payment. We have all supporting documents and communications with him requesting to resolve. What's our options?
