What options can I suggest to my boss to save him money and keep me employed if even part time?

My boss wants to replace me in my position as office manager with his wife who has no experience whatsoever. I am the only person in our 12 employee company who knows the accounting, HR, payroll, job costing, DOT requirements, and many other assorted area. Should I leave him in the lurch or stay and help?

Unfortunately, I'm not sure that's a decision I'll be able to help much with. Running a construction back office takes a lot of skill and knowledge of different processes - so, installing someone without much experience as a construction office manager could be an extremely risky move. But, for someone who's soon to be replaced, those skills are often in high demand from other construction employers, so there may be a fairly strong job market on that front. At the same time, severing business ties with a former employer is a big decision and there are a ton of factors to consider, so no office manager should make that decision lightly.
