I have to write a payoff letter for a lied that’s finally being paid to me. Can I add Interest, attorneys' fees, to the letter?

No, you do not get to add interest, attorney's fees, and anything else to it. Those are only recoverable through a lawsuit. Further, you are not writing a lien payoff letter. Your attorney should be able to help you provide the appropriate lien release form. There are four types and they are defined by statute.
