I have a verbal agreement for a project in california with an owner. Do I need a signed agreement to protect myself?

Yes. First, it is best practices to have your contracts in writing so all parties understand what is being required from the other party. Second, California requires that some contracts be in writing (home improvement contracts, where more than $500 in materials are being provided, etc.) so making it your practice to have written contracts allows you to comply with those laws. Without a written contract, it is your word vs. the owner as to what work you were required to perform, which is not a good position to be in should a dispute arise.
