How will I know if the individual I filed the mechanic's lien on has contested the lien?

FloridaMechanics Lien

I paid to have you file and serve the mechanic's lien and I received conformation of it being delivered. How will I know if they contest it?

In order to contest a lien, the property owner will have to file a notice of contest of lien. That gets filed in the public records and the clerk of courts should mail you a copy. But you can look in the public records at anytime to see if one was filed. A notice of contest of lien shortens the time you have to enforce a lien from one year to sixty days, so you are right to be worried about whether someone has filed one. Regardless, you should consult with an attorney about enforcing your lien rights.
