We have several mechanics pre liens filed and would like to start releasing the ones that have been paid in full.

You do not "release" preliminary notices; generally, you should be using the 4 statutory forms (conditional and unconditional waivers and releases upon progress and final payments per Civil Code sections 8132 through 8138) to elicit and thereafter acknowledge payments made.
