Do I need to list his employees and what he paid each of them?

I have a general contractor that needs a certified payroll for a job my company subcontracted. We subcontracted the install of the job. How do I report the subcontractor's installation? Do I need to list his employees and what he paid each of them?

If this was a prevailing wage job, note that a certified payroll submission could still be required even if you didn't have to pay wages for any worker's time on the site. So, you may need to provide a certified payroll for your own business even if the work was subbed out. Further, the customer will likely be looking for the sub-subcontractor's certified payroll as well, so it may be useful to request it even if it's unclear that's what the customer is looking for. And, the easiest way to know what the customer is looking for would be to contact that customer for clarification. Unfortunately, I'm not all that familiar with the ins and outs of Texas' prevailing wage requirements. So, consulting with a Texas construction attorney or utilizing a prevailing wage service (like eBacon or Contractors Prevailing Wage) will be more useful.
