If we have a customer that pays us quickly (10 days), but does so prior to getting payment from the General Contractor on a job, could we un-archive the project so that we could still hold the possibility of filing a lien on our customer's behalf?

Once a claimant has been paid, that claimant no longer has lien rights in the project where they've provided work. Knowingly and intentionally filing a lien on a project where the claimant has been paid in full would very likely result in a fraudulent mechanics lien filing, and that would open a claimant up to significant liability. So, in a situation where a party has been paid in full but their customer has not, that customer might be entitled to lien rights - but the party who's already been paid would not.
As for whether a project might be un-archived in the Levelset system, that would likely be a better question for your Levelset account manager - they will likely have more information on how to un-archive a project. Note, though, that the Levelset Terms of Use apply to any orders placed in the platform. And, if the Levelset platform is used to file a mechanics lien based on false information and/or fraudulent grounds, such a filing would be in violation of the Levelset Terms of Use.
