Are verbal changes to a construction contract legally binding

We have a customer who signed a contract work work (homeowner). As it progresses they added things and were told it would be added to the end of project. We sent 2 updated invoices as changes were made. Customer refuses to pay for additions. And has bounced their last installment

Verbal changes to the contract may be legally binding, but it would depend on a number of factors, probably most important of which would be what the actual written contract (if there is one) says about the scope of work and how changes/adjustments to the contract are to be handled.
